Sweet Potato Ball with Rice Cake Recipe

A new inspiration way to serve Rice Cake (Nian Gao) during Chinese New Year. Fried sweet potato balls filled with soft and chewy Rice Cake (Nian Gao) with a hint of vanilla aroma which is from SERI-AJI^® Banana Fritter Flour.

Ingredients

Sweet Rice Cake, cut into 1.5 inch cube	1
SERI-AJI® Banana Fritter Flour 150g	2 packets
Purple Sweet Potato, peel and cut into large cubes	120 g
Orange Sweet Potato, peel and cut into large cubes	120 g
Yellow Sweet Potato, peel and cut into large cubesr	120 g
Sugar	45 g
Cooking Oil	30 ml

Method

Mix 1 packet of SERI-AJI^® Banana Fritter Flour with 150ml water. Keep the batter aside.
Steam sweet potatoes until soft. Strain the water and make sure they are dry, mash them in 3 separate bowl according to the colour.
Mix each bowl of mashed sweet potatoes with 50g SERI-AJI^® Banana Fritter Flour, 15g sugar and 5ml cooking oil until a soft dough is form.
Scoop the dough and roll between palms to form a 1.5-2 inches diameter ball. Stuff in sweet rice cake and form into a ball. Repeat until all the dough is used up.
Coat sweet potato balls with prepared batter then deep fry until golden brown. Ready to serve.
