Steamed Chicken in Lotus Leaf (Azlin) Recipe

Steamed chicken in lotus leaf, it brings meaning of “good luck” (吉祥如意). Marinate the chicken with TUMIX^® and AJI-SHIO^®, it keeps the chicken tenderness and juiciness, and provides hint of pepper taste.

Lotus Leaf, rinsed, pre-soaked in hot water for 5 minutes	2 pcs

INGREDIENTS (A):

TUMIX® Chicken Stock	1 tbsp
AJI-SHIO® Flavoured Pepper	2 tsp
Oyster Sauce	20 ml
Soy Sauce	15 ml
Dark Soy Sauce	5 ml
Sugar	10 g
Cooking Oil	3 tbsp
Corn Starch	1 tsp

INGREDIENTS (B):

Ginger, shredded	10 g
Chinese Mushroom, cut into 4	4
Red Dates, sliced	5
Cordyceps Flower, pre-soaked	20 g
Goji Berry, pre-soaked	15 g

Method

Marinate chicken whole legs with TUMIX^®, AJI-SHIO^® and ingredients (A) for 5 minutes.
Open the lotus leaf, lay it in a deep plate and put in ingredients (B), then put in marinated chicken whole legs mixture.
Fold the lotus leaf over, enclosing completely. Turn the lotus leaf wrap over and lay in deep plate. Steam at high heat for 20 minutes.
