Roasted Chicken with Garlic and Salt Recipe

Chicken is a must-have menu during Chinese New Year. Our recipe is easy to cook yet with stunning taste. Soak the chicken in the secret marination water with AJI-MIX^™, air-dry and fry it. The onion and garlic aroma and crispiness of skin with tender meat made you can’t resist. Most importantly, it is only required to use AJI-MIX^™ to give the stunning onion and garlic aroma.

Ingredients

Chicken, guts removed and cleaned	1 whole (1.5 kg)

INGREDIENTS (A): CHICKEN COATING (CRISPY WATER)

White Vinegar	600 ml
Water	200 ml
Maltose	30 g
Baking Soda	5 g
Red Colouring	6 g

INGREDIENTS (B): MARINATION (3 whole chicken portion)

AJI-MIX™	300 g
Spring Onion, cut	100 g

INGREDIENTS (C): MARINATION

AJI-MIX™	50 g
AJI-NO-MOTO®	20 g
Salt	60 g
Ginger Juice	5 g

Method

Mix the ingredients (B) with AJI-MIX™, marinate the chicken for 10 to 12 hours.
Boil a pot of boiling water then hook underneath chicken wings using roasting hooks. Pour 2-3 wok ladles of boiling water over the chicken body, then put the chicken in the boiling water pot and swirl it around (about 2 circles) to blanch it for 5 seconds. Remove and rinse the chicken body with cold water.
Mix the ingredients (C) with AJI-MIX™ and AJI-NO-MOTO^®, rub evenly on the inside of the chicken.
Mix the ingredients (A) and brush evenly on the chicken skin, hang on a rack to air dry for 10-12 hours.
Prepare a pot with 50-60% of hot oil and deep fry the chicken in it for 12 minutes.
After the chicken is thoroughly cooked, turn up the heat and drizzle hot oil on the chicken skin until it becomes crispy and golden. Cut into pieces and serve.
