Method

Chicken Broth

Place the chicken bones in a large pot with 3 liters of water and bring to a boil.
Reduce heat and let it simmer for about 1 hour.
Skim off any foam that rises to the surface. Strain the broth to remove the bones.

Celestial Braised Spinach Soup with Crab Meat

Soak the dried scallops in water, then steam for about 1 hour until tender and shred into small pieces.
Blanch the spinach in boiling water, transfer to ice water to stop cooking, drain well, and then blend with 200 ml of chicken broth to achieve a smooth consistency.
Add the blended spinach, shredded scallops, and blanched crab meat to the pot of the remaining chicken broth, season with TUMIX^® Chicken Stock, AJI-NO-MOTO^® PLUS, and sugar, then mix the potato starch with a small amount of water to form a slurry, adding it to the soup and stirring continuously to thicken.
Simmer the soup for 1-2 minutes to meld the flavors and thicken it.
Ready to serve.
