Pomelo Fried Rice with Ebiko Recipe

White Rice	1.1 kg
Cooking Oil	120 ml
Garlic, chopped	4 cloves
Red Onions, chopped	2
Dried Scallops, soaked with hot water for 20 minutes & loosened	100 g
Crab Filament Stick, sliced	6 stalks
Crab Meats	100 g
Shrimp, deveined and peeled	15 pieces
Spring Onions, chopped	50 g
SERI-AJI® Yong Chow Fried Rice Seasoning 26g	2 packets

Ebiko	60 g

Method

Mix egg yolk with white rice evenly. Keep aside.
Heat the cooking oil, stir-fry garlic, red onion and dried scallop until browned and fragrant.
Add in crab filament stick, crab meat, shrimp and spring onions. Continue to stir fry until cooked, then add in white eggs and stir-fry.
Add rice coated with egg yolk and sprinkle SERI-AJI^® Yong Chow Fried Rice Seasoning. Stir-fry until mixed-well.
Top with pomelo and ebiko, serve hot.
